Morning Glory Muffins


Packed with dried fruits, nuts, oatmeal, wheat bran, and whole grain flour, these healthy muffins pack a whopping 3.4 grams of fiber each. Feel free to add your own favorite dried fruits (apricots work especially well), just make sure to toss them lightly in flour first to keep them from sinking to the bottom of the batter.

Raspberry-Cream Cheese Muffins


These taste rich and decadent, but thanks to low-fat cream cheese they have only two-thirds the fat of traditional muffins. Fresh or frozen raspberries pack fiber and immune-boosting vitamin C. Tip: Try spooning the flour into the measuring cup rather than scooping from the canister; this will ensure you don’t add too much flour.

Nutritional info is based on cupcakes made with spelt flour, and I’ve used the gram measurements for calculations. The cupcakes will also work with white flour or Arrowhead Mills gf mix. Feel free to try other flours (ww pastry, oat, etc.), but I can’t vouch for the results unless you use one of the flours listed.

Calculations use Silk plain soy yogurt, but other brands will work. Feel free to sub a non-soy yogurt: for example, SoDelicious brand vanilla yogurt (coconut-based) will work great in this recipe.

Nutritional info does include the oil. I’m not a big fan of fat-free baked goods, as I think they’re gummy. But if you don’t mind that texture, feel free to leave out the oil!

Lemon Zester, For Healthy Cooking


I enjoy cooking, but I don’t want to do it all the time. I’m more into cook extra food, and then re-purpose the leftovers. I spend a couple of nights weekly, doing my prepping, and major cooking. The other nights, I’m out of the kitchen in a half hour or less.

One kitchen tool that’s just amazing and frequently employed is my Upscale Cooking Cheese Grater and Zester. This saves me so much time. If I make string beans, I could serve them on different nights, and make them different. The first night, I could zest a bit of lemon on top. The next night, I will zest some ginger into the beans. Quite simple, but it generates different dishes that pop with flavor. Oh, remember to gently glide the zester across your citrus fruit and only take off the colored outer part. Leave the white pith behind.

A few of the other ways I take advantage of my cheese grater and zester is with my coffee. Who needs flavored coffees? I grate some cinnamon into my coffee, and the next time, I could use nutmeg. A benefit, I discovered is that the coffee taste has meaning and depth, which means I need little if any sweetener. Want something unique, try a little cardamon in your coffee. Have a great time and experiment. Fresh ground spices tend to be more intense, so you do not need much, compared to store bought pre-ground spices. Do a little, taste, and do a tad bit more if needed.

Perhaps you have made Asian food? It looks like every recipe asks for ginger, garlic, and other interesting items. This cheese grater and zester makes mincing the ginger or garlic easy and not a task. I used to take 30 minutes to mince only one ingredient. Now it is like, boom, it’s done, and no getting cut with a knife worries either.

Add extra organic flavor to your sauces and dressings. There are lots of recipes available, so try making your personal lemon or orange vinaigrette. Put a bit of lemon zest on your pasta, add the sauce, and grate Parmesan Reggiano and some other hard cheese on top. Try something unexpected and zest some horseradish root, kohlrabi, or daikon into your next dish. For desert, grate some chocolate on top of a bowl of ice cream, yum.

This kitchen tool has many names, cheese grater, zester, rasp, or microplane. Microplane is not a regular word. It’s a brand name.
